After a brief stint in Michelin starred restaurants, I returned to contract catering where I have spent the majority of my career. I have been very fortunate to have worked in some of the City’s most prestigious and high end corporate environments such as; Barclays World HQ, Goldman Sachs, The London Stock Exchange, State Street Bank and mining giant Rio Tinto. I returned to Westminster Kingsway College in 2009 and completed a Culinary Arts Degree on a part time basis.

A Lamb Kleftiko in a backstreet Taverna in Greece. Just incredible.

T-Bone to share, chargrilled, best of both.

Favourite shellfish

Seared hand dived scallops.

Favourite ingredient

Eggs. Hens, quails, duck, pheasant and ostrich to name a few. Boil them, fry them, scramble them, poach them, make sauces, cakes and dough – the list goes on. Cooking would be impossible without them!

Musical hero

Michael Jackson because I love the moonwalk. Shamon!

Personal ambition

To return to the place I grew up, South Africa, and run the World’s Greatest Ultra Marathon called ‘The Comrades’. It is an internationally recognised South African institution and is run between the province of Kwa–Zulu Natal and Pietermaritzburg and is a body sapping 90km. I grew up watching it and it has always been a personal ambition of mine!!
